I’ll admit it. I was a little turn off by the name of this waffle. As I search the internet and kept seeing the same waffle title everywhere I thought to myself “waffles of insane greatness, huh? Compensating for something?” To me it seemed like if it need such a flashy name then it couldn’t be that good, but on the other hand it did have a five star rating with over 100 reviews and when that many people like a recipe it has to be at least good, if not insanely great.  So I tried it, was there any doubt I would?  And it is everything a waffle should be: crispy on the outside and soft on the inside, also it’s quick to whip together. The one thing about this recipe is that it doesn’t make very much so if there are more then two of you I would double it.

10/10 Update: I made these waffles (again) this weekend and since I had a hankering for a bit more of a fall flavor I doubled the recipe and added 1 teaspoon each of ground ginger and ground cinnamon and ¼ teaspoon of nutmeg. The results? A piece of fall on my fork. Delicious!!

Waffles of Insane Greatness
 
Ingredients:
¾  cup all-purpose flour
¼ cup cornstarch
¼  tsp. baking soda
½  tsp. baking powder
½  tsp. salt
1 cup whole milk or buttermilk
1/3 cup vegetable oil
1 egg
1 ½ teaspoons sugar
¾ teaspoon vanilla extract
Butter and syrup, for serving
 
Directions:
In a medium bowl whisk together the flour, cornstarch, baking powder, baking soda, and salt. Add the milk, vegetable oil, egg, sugar and vanilla, mix well and let batter sit for 30 minutes.
Preheat a waffle iron (the oil in the batter allows the waffle to release easily so no non-stick spray is necessary). Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.
