Have you ever seen the tv show Weeds? I recently got sucked into watching it (several seasons behind) and I quote from the show would not get out of my head and since it had to do with food I decided the only thing to do would be to make it (and share it with you so it would get stuck in your head too). Without spoiling too much the main character (Nancy) has invited her boyfriend over for dinner and asks her brother-in-law to cook dinner. When it’s time to cook dinner the brother-in-law is no where to be found and Nancy and her boyfriend end up having to make the dinner themselves. The meal turns out to be a disaster and while everyone tries not to gag on their food her brother-in-law tells her what she did wrong.  And since the brother-in-law was supposed to cook it in the first place she retorts with a clever, “The thing with paella is you have to be here in order to cook it.”

Paella (Spanish Rice + Meat)
4 servings

Ingredients:
2 teaspoons olive oil
1 large shallot, chopped
1/4 cup carrot, chopped
1/2 cup tomatoes, chopped
1/8 teaspoon cayenne pepper
1 teaspoon ground cumin
1 cup uncooked brown rice
2 cups broth (chicken and vegetable both work well)
2 cups diced meat, cooked (beef, chicken or seafood)
1/2 teaspoon salt

Directions:
Heat olive oil in large skillet over low heat. Add shallots, carrot, and tomatoes and saute until shallot is translucent. Add spices, rice, broth and salt. Cover and bring to boil, then reduce heat and simmer until rice for about 45 minutes. Check every 10 minutes to be sure the broth has not been absorbed too quickly. Just before all the liquid has been absorbed add the diced meat, stirring well to incorporate. Serve when rice is tender.
